Restaurants started building permanent brick pits in the 1920s and '30s, which helped fuel the rivalries between regional styles.

Wayward Smokehouse 

Wayward is a classic smokehouse where the community gathers for comfort food and lively conversation. It's a fun place to watch the Raven's game or to enjoy a quick bite after work. Pitmaster Josh White smokes the meat daily, and it falls off the bone. Guests always receive attentive service, and they can enjoy their meals inside or out. Offerings include brisket, pork belly, and St. Louis ribs. 

Chaps Pit Beef

When Gus Glava wanted his son-in-law to get out of working in the steel mill, he invested $12,000 and opened Chaps Pit Beef. The restaurant began in 1987 as a shack. It always draws a crowd and has had five additions to keep up with the demand. Chaps earned recognition on Diners, Drive-ins & Dives, and its casual atmosphere is where strangers become friends. The menu includes ribs, whole chicken, and minced barbecue sandwiches. 

Woodrow Bar-B-Que

Woodrow brings a little taste of Texas to Baltimore. Opening the restaurant was a lifelong dream of pitmaster Matthew Piron. He prepares 100 percent Texas-style meats over oak wood. Matthew never uses gas or electric during the smoking process, and the meat is hormone and antibiotic-free. The restaurant features a rustic atmosphere and comes complete with chalkboard menus and old license plates. Meals include pulled pork, turkey, and Texas sausage links.
